Two comments about that:
1) We now ship stable releases of Bio-Formats with Fiji by default. If you
want the daily builds, you have to explicitly enable them as described at
http://fiji.sc/Bio-Formats#Daily_builds
2) You can of course turn off updating in Fiji, and only update when you
need a new feature.
What is missing is the ability to "roll back" to a previous known-to-work
state. We plan to add this to ImageJ2/Fiji in the future.
