You might also try the new-fangled clicky installer for OS X:
http://users.openmicroscopy.org.uk/~igg/OME-Installer.dmg

This will install all dependencies (Postgres, perl and C libs, etc)  
without using fink.
The OME code-base it installs is a few weeks old from CVS, but that's  
easily updated once you install it the first time.
You can copy the contents of the mounted "OME-Installer" disk (or  
just the Resources/OME folder inside it) to your favorite place, then  
do a "cvs up -dPA" from that directory in the terminal, and then re- 
install the update by doing "sudo perl install.pl -y" (or, don't use  
"-y" if you want to modify the install parameters).
