[ome-users] Quicktime Export Options

I can't speak to that really, but it's possible that whichever plugin
you were using previously is not included in Fiji.

"Plugins > LOCI > Bio-Formats Exporter" should allow you to save
uncompressed movies - just make sure to set the file name extension to
".mov".
